To be completely honest, our family is not much of the asparagus-loving type…
But since it is asparagus season and our farm has a HUGE asparagus patch I don’t want to go to waste, I have come up with {in my opinion} the BEST recipe to make asparagus AMAZING!
I learned from my grandma how to pick asparagus…
Don’t let it get too tall!
Once it gets tall, it gets “woody” aka unable to tear or rip apart with even the sharpest teeth!
The fat short ones are the best;-) 6″ is best and most flavorful!
When it is raining a lot around here, sometimes that means I could pick TWICE A DAY!!! They can grow SO FAST you feel like you could just sit down next to the plant for a few minutes and it will be ready to pick!
This is a good thing about asparagus… but also why asparagus can become overdone around here. I have started giving it away which seems to make people smile so I will just keep doing that to keep my kids from asking me about their horrible-smelling “potties” EVERY time they eat this stuff;-) Although the LOVE eating it, the ALWAYS make a comment later;-)
If you want a DELICIOUS and TASTY and FLAVORFUL recipe that you just stick in the oven, set a timer, and go about your other meal prep, you have come to the right place!
I bet if you try it this way… you will like asparagus like the rest of us… and if you already like asparagus… you will like it even more;-)
- asparagus
- sea salt
- pepper
- garlic, fresh crushed or granulated
- olive oil
- balsamic vinegar
- parmesan cheese, grated
- Preheat the oven to 350 degrees.
- Rinse, cut off the harder ends, and dry asparagus.
- Lay asparagus flat on a baking stone.
- Drizzle with olive oil until very lightly coated.
- Sprinkle sea salt, pepper, and garlic to taste.
- Dribble a little balsamic vinegar on top of the asparagus.
- Sprinkle on a little Parmesan cheese or leave it off until you take it out of the oven.
- Bake 15-20 minutes, depending on how crispy you want them.
I PROMISE if you don’t like asparagus cooked this way you will never like it but I also promise you will want to add this healthy and yummy side dish to every summer meal this year!

yum! We sadly don’t have our own asparagus, but Aldi frequently has it cheap! I actually have NEVER had it this way (although we always DO have Parmesan on our asparagus)! Next time I get it I will have to try your recipe!
