I LOVE the health benefits of sweet potatoes… especially in the form of sweet potato fries!
Sweet potatoes provide 400% of your daily need of vitamin A.
More Vitamin C than white potatoes.
They are less calories per serving than a white potato!!!
HUGE amounts of fiber, which is GREAT if you have digestive problems.
Fewer carbs than white potatoes.
And every once in a while I enjoy the taste of them in a form other than fries…
But usually not so much…
So I make HEALTHY FRIES!!!
These tastes morsels deserve their own post!
They are worthy!!
They are delicious…
And a staple in this house!
- 2 large sweet potatoes, peeled and sliced into fries
- 2 Tbsp. olive oil
- sea salt, to taste
- pepper, to taste
- spices: cumin or chili powder, dry ranch mix, whatever extra flavorings you might want.
- Preheat oven to 400 degrees. Peel the potatoes… which I find completely therapeutic… and cut into thin fries. The thinner the crispier! Coat with olive oil, sprinkle on sea salt and pepper. Spread out on cookie sheet, making sure they don’t overlap and have some space around them.
- Bake at 400 degrees for 20 minutes until soft and starting to brown on the outside. If I want them extra crunchy… I then place the oven on hi broil for a SHORT time… like 2 minutes! This will crisp up the outsides.
Serve immediately with Homemade Ranch!!!
