Healthy Breakfast Cookies

You say cookies for breakfast….

And the kids says… “You are the best mom in the universe and no one is better than you and I think I will obey your every command and clean your house today!”

Said no kid ever:-)

But I got pretty stinking close to that response when I told the kids I was going to be making cookies for breakfast…

And it helped that they made them themselves (this makes them so proud and willing to eat whatever it is they made:-)


Add to all this: THIS IS THE HEALTHIEST COOKIE EVER INVENTED!!!

And they taste amazing!!!

They are also very very versatile!! So whatever you have on hand WORKS and just changes the taste slightly.

So for all of you interested in cookies for breakfast…. Here you go!

Healthy Breakfast Cookies

Prep time: 10 mins

Cook time: 14 mins Total time: 24 mins Serves: 18 Healthy and yummy breakfast cookies kids will LOVE to eat. Ingredients

  • 2 bananas
  • 1/4 c. chocolate chips
  • 2 Tbsp. honey
  • 1/4 c. peanut butter
  • 1/2 c. coconut oil, melted
  • 1/4 c. coconut flakes
  • 1/4 c. sunflower seeds (optional, if you don’t have them, add more of another dry ingredient)
  • 2 c. rolled oats
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 tsp. vanilla
  •  
  • 1/2 c. nuts (you choose, I LOVE Pecans… so I used Pecans;-)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Mix all ingredients together, spoon into your hand and mold into round balls. Put onto two cookie sheets, using parchment paper for easy clean up;-)
  2. Bake for 12-14 minutes
  3. Viola!!!

A healthy and delicious breakfast for the whole family. The baby feeds it to herself (WIN IN MY BOOK!), the kids LOVE eating a cookie for breakfast and mommy and daddy can pull them out throughout the week when time is tight!!!
