SPRING TIME is HERE!!!! And for me that means spending time laughing and chatting and entertaining my friends and family! The best way I know to do that… is to entertain with a Spring Brunch!
This is EASY!!!! I promise!
I am on bedrest for prego problems (story of my life;-) and I was still able to pull this one off so I promise you, when I say it is easy:
IT IS EASY!!!
Have your babes set the table;-) This was a must for me because of said bedrest, but if you are a capable person… you can do it too… or just decrease your workload a little more while teaching your kids again to serve.
Make 3-5 items. I planned on making 4 (I don’t usually use an even number when decorating OR when serving food but it all sounded good to me;-) different things… but woke up Saturday morning not wanting to go to that much effort…. so I made 3 and no one even noticed!
Hint: The things that usually stress out a host when entertaining are things that no one else even know exists or is happening in the background of your mind! Don’t stress it! Let it go and have a good time;-)
Step 3: Pour the drinks.
If you are serving Mimosas, make them ahead of time and put them in a gorgeous pitcher about 5-10 minutes before guests are expected to arrive. Same with anything else you are serving!
My goal in entertaining is that first and foremost my guests are taken care of and feel loved on but second that I don’t end the time feeling frazzled and worn out, never wanting to do it again!
I prevent this from happening by having as much DONE and set up BEFORE any guests arrive! That way when my guests get there I can focus on them and getting them situated and enjoying their time in my home right away.
Now for the Food:
Those three items I served where EASY! One wouldn’t even be considered a breakfast food… but there were berries so we are calling it good;-)
The key here is SIMPLE!!!! If quiche is easy for you, make it! For me, because I have never made a quiche, that sounds stressful. So I stick with what I know.
~Breakfast Egg Bake
Breakfast Egg Bake is a STAPLE in our home (since we have so many chickens running around the farm!) because it is simple, versatile, and is made the day ahead, leaving less work to do the day of a party!
- 12 eggs
- 2 c. milk
- 1 tsp. mustard
- 4 slices bread (crusts cut off and cubed)
- 2 tsp. sea salt
- pepper, to taste
- 1-2 lbs. ground breakfast sausage
- 1 c. cheddar cheese (shredded)
- Brown sausage. Set in a greased 9x13 pan. Put bread cubes on top.
- Whisk together the eggs, milk, mustard, sea salt, and pepper.
- Pour over the sausage and bread.
- Sprinkle with cheese.
- Cover and refrigerate overnight.
- Bake at 350 for 45 minutes.
The Fruit Bowl is also an easy make-ahead food that takes the pressure off the day of entertaining! I just chop up the fruits I want to include and put them in individual bowls in the fridge. This keeps them from discoloring other fruits (aka pineapple turning red from strawberries). In the morning, I dump them all into a big bowl, throw a serving spoon in there and call it good;-)
This is the most SIMPLE and DELICIOUS Berry Cobbler! You won’t believe how simple this is! Now, I am going to make you wait until my next post to get this recipe… but I PROMISE it is worth the wait!
Make sure you have coffee with the fixin’s out and ready. Along with some orange juice, milk and water to give everyone a few options, then….
